Achiote paste is a Mexican spice paste made from the seeds of the annatto plant. The dark red seeds are ground and then prepared into a paste with various other spices (such as cumin, pepper, coriander, oregano, etc.).

Description

The plant comes from Yucatan in southern Mexico. Achiote is mainly used to produce the typical red color used in traditional Mexican dishes such as cochinita pibil, chorizos or tacos al pastor.
